Sunday Night Crockpot Cooking

Tonight, after my massive pinning this weekend, I started something Asian flare in my crockpot; I made this http://pinterest.com/pin/14284923790193068/

It is a Terriyaki Chicken Recipe that was super simple.
1 lb of chicken (sliced/cubed)
1 cup of chicken broth
1/2 cupe of terriyaki or soy sauce
1/3 cup brown sugar
3 minced gloves of garlic

To make it WLS friendly I used brown sugar splenda and the cup was not packed. I used fat free chicken broth and when I cut my chicken, I used my kitchen shears and cut up fat trimmed chicken tenders. I also used a mixed of hoisen and terriyaki sauce. I had both on hand, both low sodium and low sugar. I mixed it up and then added garlic and some minced onions.

I cooked on low in my crock pot for 1 and half and then cranked it up to high for an 1 hour. It was moist, flavorful and had a great texture and taste! I put it over some quick brown rice and have enough for another 2 meals. Great bang for my buck, hit the Asian flavors I wanted, and will be great for lunches this week.
