As I have been on this new endeavor of overhauling my eating habits and making better choices, I've been able to experiment with lots of new things. One of the things I wanted to try was spaghetti squash. I was intimidated by it because I had tried to make acorn squash previously to my epic demise. This would not happen again! My super cute husband used to be a produce manager so even though he may not eat veggies, he knows lots about them aka - I can always get the scoop on when things are in season. So I asked if I could take a look at getting one and trying it out. Luckily he helped me pick one out and tonight I tried it!
First I want to say it has a hard outer shell. It is like the pumpkin thick skin. So based on a recipe I had read it told me to poke some holes in it and run it in the microwave for 3 minutes prior to cutting. Hubs tried it prior to the microwave and then gave in to my method. Voila' it was much easier to cut. He helped me hack into it and I do appreciate it because my knife skills aren't so good in this arena. Second I scraped out the insides and cut off the ends to make is square versus round for fitting in the pan.
I placed the squash (both sides) inside side down and put in enough water (hot) to cover them half way. Stuck them back in the microwave for 10 min. Perfection! This is the recipe I used to cook it Now since this was my first go at it I added a little butter and some pepper and ate it as a side to my steak. Loved it! I'm definitely kicking it into high gear and going to make some meat sauce and pour over it just like spaghetti and I'm also thinking about making a garlic butter sauce too. I think this is a pretty versatile veggie that a for a little can bring you a lot! Now, just learning to cook more with it :-)
