Chicken Salad Recipe (#2)

A few weeks ago I made a Copy Cat Arby's Chicken Salad Recipe and it turned out delicious, but last night I was craving it and so I added some things to the recipe to give it some new flavor.

I bought a rotisserie chicken yesterday (Savory flavor from Kroger), picked up some purple grapes, a yellow onion, a pink lady apple, and about .2 lbs of candied walnuts. I chopped them all up and added some miracle whip to it for a crunchy, sweet chicken mix. I was pretty stoked with myself with the good crunch the pink lady apples had as well. It didn't take long to make at all and the rotisserie chicken was a great idea. I got a ton of meat that was cooked and flavored and it was easy to pull apart and shread for the salad.

I was excited to find thin bagels. I don't usually eat a ton of bread, but I've needed some carbs in my diet so I thought I would try these. I get just enough with a heaping scoop of chicken salad. I wouldn't be able to eat the bread when it wasn't fresh at all - too tough for my tummy, but overall this was a nice change to eat for lunch. They are only a 100 calories and something different isn't always that bad. I have a ton of chicken salad that I made for the week so sandwhiches it is!

  1. Sounds delicious! Next time we do a whole chicken I'll be making something like this with our leftovers!
